Raw Cholocate Cookies

I learnt this recipe from my amazing raw vegan mum. It’s simple with only few ingredients, the way I like it and sooo delicious! The cookies can be stored in the fridge for up to two weeks, frozen, shared with friends and family or eaten all by yourself.. just kidding!

Here it goes:

Base:

140 g almonds soaked over night

110 g dates

50 g dry coconut flakes

3 tbsp of soft coconut oil

2 tsp of Cinnamon

A pinch of Himalaya salt

Filling:

50 g of coconut oil

25 g of organic cocoa powder

Pinch of salt

2 tbsp of agave

Method:

First blend nuts and then add remaining base ingredients and blend it all together. Form round cookies with a hole inside ready for the filing. Mix filling ingredients together with a spoon. Once it’s all blended together use spoon to fill the hole in cookies. Refrigerate for 30 min before serving.
